- Carbohydrates increase the levels of serotonin in the brain. Therefore, eating carbohydrates can increase the levels of serotonin in the brain, which improves our mood. The only problem is that when we are stressed, we crave simple carbs, which raise serotonin levels quickly but temporarily.
